Sangria

Sangria Recipe


Bottle of red wine (your preference and you really cannot go wrong). A sweeter red wine if you're unsure. I used a Lambrusco in North Carolina. Cheap, sweet, and has a little bubble which I liked.
Bottle of sparkling water (this is about 3/4 the amount as the wine) - I use lime flavor
Triple Sec
Brandy
Orange Juice


(Not really sure the amounts of the last 3, didn't really measure it out, maybe 2-3 cups each? I'm pretty sure they were equal parts. Start off small and add until like the flavor, can't mess it up).
Chopped fruit of choice/season...apples, oranges, strawverries, mangoes, peached, cherries, blueberries. Again, whatever you want chopped in there. That's probably my favorite part!
Serve chilled over ice.


Catfish With Tangy Orange Sauce

1/4 cup orange juice
2 tablespoons vegetable oil
2 tablespoons light soy sauce
1 tablespoon lemon juice
1 clove garlic, minced
1/8 teaspoon pepper
4 pounds U.S. Farm-Raised Catfish fillets

1. Prepare a grill or preheat the broiler.
2. Mix orange juice, oil, soy sauce, lemon juice, garlic and pepper in a bowl. Brush catfish fillets with sauce mixture.
3. Place fillets on oiled grill rack or broiler pan rack. Grill or broil about 4 inches from heat source for 5 minutes on each side, brushing frequently with sauce, or until fish flakes easily when tested with a fork.
